Pulled beef corn fritters (makes roughly 10 fritters)
-500g pulled beef (I used oyster blade but this can be optional)
-1 x can of cream style corn
-1 cup of flour
-3 x egg
-2 TBSP melted butter
-1 tsp salt
-1 tsp ground pepper
-1 tsp baking soda
-1 x red onion finely chopped
-50g chopped coriander
1- Crack the eggs into a mixing bowl in beat for 1-2 mins. Add corn, pulled beef, salt & pepper and mix for another 1-2mins.
2-Add all other remaining ingredients and mix well until they start to form a thick batter like consistency.
3- Heat fry pan on a medium heat with a generous amount of cooking oil.
4-Cook for 4-5mins per side or until a nice golden crust has formed on each side.
5- Serve with your own choice of sauces, sour cream or eat as they are!
