Garlic ginger chicken kofta's with lemon herb couscous

Garlic ginger chicken Kofta's

(Makes 5 )


-500g chicken mince

-1/2 onion finely chopped

-1 crushed garlic clove

-1/2 tsp ground ginger

-1 tbsp olive oil

-1 tsp salt

-1tsp cracked pepper

-Handful chopped parsley

-Skewers x 5


Method


1-Combine all ingredients in a bowl and mix for 4-5mins with your hands until you start to feel the mix stick together.

2-Heat your fry pan with olive oil on high

3-Shape your koftas with your hands then stick your skewer through the bottom and put into the fry pan. Cook for roughly 5 mins per side or until a nice golden crispy texture on each side.






Lemon herb couscous (Optional)


-1/2 cup couscous

-1 tbsp chicken stock

-1/8 cup lemon juice

-50g finely chopped basil

-1 tsp salt

-1 tsp cracked pepper

-1/2 cup boiling water


Method


1-Add couscous into a pot then add your boiling water and lemon juice. Mix well then put the lid on the pot and rest for 5 mins.

2-Add all further ingredients then mix well before serving as a good base for your chicken koftas
