Ingredients
-1 x Bird & burrow naked free range chicken
-2 TBSP grated lemon zest
-1/4 cup olive oil
-2 TBSP fresh chopped thyme
-1 TSP onion powder
-1 TSP freshly grated ginger
-1 TSP salt
-1 TSP cracked pepper
1-Lightly Rub a light amount of salt & pepper on the butterfly chicken, before basting generously in the lemon, garlic & ginger mix.
2-Pre heat oven or BBQ to 180 degrees Celsius and cook your chicken for 50 mins, basting both sides at the 15 min & 30 min mark heavily. If you are doing this on a BBQ make sure you are not cooking over direct heat, move the chicken slightly away from the flame or hot coals to avoid burning the skin.
3-For added crispy skin turn your oven to grill and cook for a further 3-4 mins with the skin side up. BBQ users move your chicken on top of the fire/coals and face the skin side down for roughly the same time before serving.
